Brutalisten

Inspired by pandemic boredom, experimental artist Carsten Höller thought to himself: "What if I apply architectural Brutalism to cooking? What would that be like?".

From the resulting Brutalist Kitchen manifesto, head chef Coen Dieleman serves dishes commited to purity and sparsity of ingredients. Elaborate cooking techniques may be used, but decorating the plate is avoided. The restaurant interior is also quite unique, with the decoration intientionally askew to convey a surreal feeling.
